potato soup

This is just a concoction I made up. No, it’s not from scratch, but it’s good! This is great with sandwiches or alone.
3 cans cream of potato soup
3 C milk
2 cans chopped new potatoes, drained
1 1/2 cans sweet corn (vacuum packed)
1 sweet onion (vidalia)
1 lb colby-jack cheese
1 lb cooked, drained and crumbled maple bacon
Cut up onion and saute’ in oil or butter (in large pot) until onion is soft and clear. Meanwhile, cut up bacon and cook in a separate ban until bacon is well done. Add canned soup and milk to the onions, stir. Next add potatoes and corn. Add bacon and cheese last. Stir frequently on low until cheese is melted. Do not let boil or bubble. Add plenty of salt & pepper to taste. This make a good amount. We like to top it with a plop of sour cream and a little more cheese.
